Dunno' about others, but I know that "Gundam" is colored that way to resemble the American flag (The symbol of freedom), as it's name is a mixture of "GAN" (Gun) and "FREEDAM" (Freedom). Which is why it's japanese name is "Gandamu"

the original gundams colour was white/grey. sunrise wanted it to be more colourful so it would sell toys better. most things were named 'freedom' like white base was freedom base.
"During its conceptual phase, the series was originally titled Freedom Fighter Gunboy or simply Gunboy, because the title robot was armed with a gun and the target demographic was young boys."
